Highly regarded for its intense flavor, Bowfin caviar, also known as Choupique are a traditional part of the Cajun cuisine. Though not a sturgeon, this ancient species of freshwater fish produces a robust and distinct roe that has a mild tang and subtle hints of spice. Bowfin caviar is wonderful as a garnish, appetizer or even in baked preparations where the roe will turn to a red color once cooked. Bowfin caviar is also great in salads and pastas, as well as presented on blini's for a cocktail party!
